Except it didn't set because I didn't use enough gelatine. One leaf is not enough for 2 5floz yoghurts.

Asparagus in butter, crab wrapped in Serrano ham

I made stock with the crab shell, added 2 cubes of reduced poultry stock and added this to the crab meat. I had hoped it would set slightly, but it didn't, so I added a little couscous to make it a firmer mix. Then wrapped it in the ham.

Saddle of hare in cream, polenta cakes, salad with roast garlic dressing

I made the polenta too wet so it ended up more like normal polenta, ie frying it didn't work. Added parmesan to it.
