Calzone of spinach, feta, tomato; ratatouille

This works. I made a dough with 6oz flour, 1/2 tsp quick yeast and as much water as I could incorporate. I dumped it onto a tray and left it while I went for a run up Crippets and over Leckhampton hill (1.09). During the run I tried to think about what I might do with this. When I returned, Colin was home and asking when dinner might be ready. I softened some onion, garlic and added the spinach left from yesterday, a few handfuls; plus some mint from the garden that didn't have that insect gobby stuff or snail holes. I squeezed out the water, and added a spoonful of tinned tomato that was in the fridge. The dough has spread all about the tray. I put the spinach mix in a wide line down the middle and put some cut up feta and 2 half potatoes that were left over from saturday. About a half pack of feta ie 100g. Then carefully folded over the 2 sides of dough over the middle. Then put in the top of the oven at high heat (gas 8??). Then went to shower off the mud & sweat. Then I thought I could smell burning but it was just browning. I think it was in the oven 20 mins, I turned it over about 2/3 through. As I said, it works, it is very good.

Today I ate: 2 cheese sandwiches, a huge potato with chilli, some oats and dried fruit, half a melon, a peach, a banana, a cake and a flapjack, another huge potato with curry, two or three salad sandwiches, some beef stew, bread and marmite. Whoar! I like bike racing

Today I ate: fried egg butty and baked beans, oats and dried fruit, the other half melon and a nectarine and a banana; a bacon butty; some ginger oatmeal cake, flapjack; another bacon butty; lentils and ratatouille.

Dinner: pea soup
