This all goes very well.

Trifle of toasted brioche, strawbs, rosewater with custard

Custard was 2 large eggs, 2tbs vanilla sugar, 9floz thick double cream, also 1 leaf gelatine to help it set. I used 6 brioche finger-rolls and, er, about 1 1/3 large punnets of strawbs, Did 2 layers of each and squashed it so it was a bit more like a summer pudding.

I made the basil ice cream with something like 3-4 floz of cream/milk and half an egg; I'm not all that sure as it ended up being a small amount. Some basil, yeah I don't know, 4 sprigs of it? Made custard last night and tore the basil into it. Some balck pepper too. Courgette, I used 1 medium courgette and 2 smallish tomatoes. Diced the courgette small and cooked on low heat in evoo, like for ratatouille. Then added diced tomato. I drained off the liquid and reduced it, and at some point a dash of balsamic ended up in it. Aubergine on the ridged grill, 4 slices each. These got assembled into towers with layers of some of the courgette. It was all remarkably good; contrasting and complementary flavours.

Gazpacho

Salt cod fritters, stewed red pappers, hummus

NGS had some salt cod, I'd bought it ages ago. Soaked a piece for a couple of days, changing water a few times. Boiled some potat diced small. Poached the cod. Cooked some garlic in oil then in some milk, made a thick batter with half an egg, some flour and the garlic milk, flaked the cod and mixed this in with the potatoes. Fried in 4 fritters. Not sure if the dicing of the potatoes was the right thing, I just wanted a bit of textural interest. Anyhow it is nice and there will be more salt cod adventures to come. It is not at all too salty, by the way.

Foccacia with tomatoes, fennel, feta, olives; rws

I made a bread dough with 6oz flour and as much water as I could incorporate. 25 minutes "kneading" to develop the gluten. I only do this because it is tremendous fun. Went for a run (warm up then fast 30 mins then warm down). Sliced fennel thinly and fried, then made a sort of pizza shape with the dough, put the fennel and remains on sunday's tomatoes on top and baked for 20 minutes.
